Wastewater from sinks and dishwashers contains small amounts of FOGS (fats,oils and greases) which enter the drainage system which then flow into sewage treatment systems and septic tanks where they form a floating scum layer. This scum layer is very slowly digested and broken down by microorganisms in the anaerobic digestion process. However, excessive or large amounts of FOGS from food production in kitchens and restaurants can overwhelm the sewage treatment facility and septic tanks, causing a release of untreated sewage into the environment.
